2 of our favourite Immune Boosting Recipes!

Did you miss out on our Winter Wellness Workshop with our Naturopath Lauren Campbell?  Don’t fret we can still help you get through this season without getting sick!  To those who came along,  THANK YOU we had so much fun playing with herbs and tasting immune boosting mushroom elixirs!

But on to our favourite Immune boosting recipes..
Mum’s healing Chicken Soup
Ingredients:

1 cup rice (short grain, brown, red or black)
4 cups water
4 cups chicken stock/ bone broth
2 FR chicken breasts, thinly sliced
2 tablespoons ghee
½ chopped onion
2tbls lime juice
1 ½ tsp minced garlic
1 ½ tsp minced ginger
1tbls white pepper
¼ cup chopped spring onion
¼ cup chopped coriander
¼ cup chopped parsley
1 small chilli
OPTION- shiitake, enoki or button mushrooms

In a medium size pot over low heat, simmer rice, water and stock for about an hour or so until rice is soft.
Marinate chicken in lime juice/salt for about 5 minutes.
In a skillet, heat oil and saute onion, garlic & ginger until tender; add white pepper and marinated chicken.
Cook, stirring for 10 minutes or so.
In small bowls, put 1 cup of heated rice broth and sprinkle with chicken, chopped green onion, coriander, chilli and parsley.
Serve.

Immune Support Drink

¼ tsp freshly grated ginger
½ tsp freshly grated turmeric
Tiny pinch black pepper + cayenne
1/2 lemon, squeezed
½ tsp manuka honey
1 tsp apple cider vinegar
100mls warm water

Option 1: add one drop DoTerra on guard/oregano oil
Option 2: make into a fresh juice with carrot, celery, orange, pineapple
Option 3: make into a probiotic kefir smoothie
